Is pasta vegan?

Worth checking.
Dried pasta almost always is. It is durum wheat semolina and water, and that is the whole recipe. Fresh pasta almost never is, because the traditional recipe uses egg.
Dried pasta: yes
Italian dried pasta is legally required to be made from durum wheat semolina and water. That is it. Spaghetti, penne, fusilli, rigatoni, orzo, lasagne sheets — the standard dried supermarket versions are vegan, and have been forever.
This holds for almost every brand in almost every country. It is one of the few foods where the safe answer really is “yes, nearly always”.
Fresh pasta: usually not
Fresh egg pasta — pasta all’uovo — is flour and egg. That covers most of the chilled tagliatelle, fettuccine and lasagne sheets in a supermarket fridge, and nearly all filled pasta: ravioli, tortellini, agnolotti.
Filled pasta has a second problem even when the dough is eggless, because the filling is usually ricotta, parmesan or mascarpone.
There is a southern Italian tradition of fresh pasta made with just semolina and water — orecchiette, cavatelli, busiate — which is vegan, and increasingly easy to buy.
Things worth a glance
- Egg-enriched dried pasta exists, usually sold as “egg tagliatelle” in nests. It says so on the front.
- Coloured pasta is normally beetroot, spinach or squid ink. The first two are fine.
- Fresh gnocchi often contains egg, and sometimes cheese.
- Parmesan is not vegetarian either, let alone vegan — it is made with animal rennet, by law under its protected designation.
The sauce is the harder question
Pasta itself is rarely the problem. Pesto contains parmesan almost by definition. Carbonara is egg and cured pork. Many jarred tomato sauces contain cheese, and a surprising number of “creamy” sauces contain milk powder rather than cream.
